Abstract

Due to the intensification of production components and the involvement of new elements of crop cultivation technology, the nitrate content in crop products and, accordingly, in the products produced, often exceeds the permissible maximum concentrations. Nitrates mainly enter the human body with vegetables, fruits and berries and account for about 70% of the daily dose, the rest comes with water and other products. The aim of the study was to determine the influence of the fertilization system and the size of the planting fraction on the adaptive properties and accumulation of nitrate content in tubers of early-ripening potato varieties in the conditions of the southern part of the Western Forest-Steppe of Ukraine. The article presents the results of a comprehensive assessment of early-ripening potato varieties Spas and Slauta for nitrate content and their content varied according to each individual variety and the proportion was from 68.4 to 109.5 mg/kg of fresh weight. The maximum nitrate content in the Spas potato variety was observed in the variant with the application of mineral fertilizers N90P90K120 + growth stimulator Nova-Marin + microfertilizer Nova-Macro and when planting tubers of 28-40 mm in size, it was 84.3 mg/kg on average over the three years of research, and when planting tubers of 40-60 mm in size, the highest indicator was in the variant with the application of N90P90K120 + growth stimulator Nova-Marin and was 75.7 mg/kg. In the Slauta variety, the highest indicators were observed with the application of mineral fertilizers N90P90K120 + growth stimulator Nova-Marin + microfertilizer Nova-Macro and planting tubers of both fractions and were 108.5 and 109.5 mg/kg of raw weight, respectively. A separate conclusion that follows from the results of the study is that in order to improve the quality of potatoes, it is possible to apply such factors as the correct choice of variety to meet the requirements for dry matter content and improved elements of growing technology
