The article presents the results of a study on the effects of supplementing the diets of fattening young bulls with sources of omega-3 and omega-6 polyunsaturated fatty acids and a selenium preparation on growth intensity and the nutraceutical value of beef. The experiment was conducted during the winter stall period on 30 Polissia beef breed bulls, 15–16 months of age, divided into control and two experimental groups using the method of analogs. For 60 days bulls in the experimental groups received a mixture of flaxseed and sunflower oils; in addition, the second experimental group received sodium selenite. The results showed that oil supplementation significantly increased α-linolenic acid intake by 2.2 times, reducing the ω-6/ω-3 ratio from 5.13:1 to 2.72:1 ‒ a value close to that recommended for a balanced diet. The inclusion of sodium selenite elevated selenium intake to physiologically adequate levels. A statistically significant difference
(P < 0.001) was recorded in the average daily weight gain: bulls in the first and second experimental groups outperformed the control by
73.4 g and 93.4 g, respectively. These findings confirm the effectiveness of the proposed dietary strategy for enhancing both meat productivity and the biological value of beef. This approach aligns with the principles of the “One Health” concept and addresses current priorities in ensuring food quality and human health.
